Instructions

  • Preheat the oven to 375°F (190°C).
  • Using a sharp knife, cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
  • Season the inside of each chicken breast with salt and pepper.
  • Stuff each chicken breast with 1/4 cup of cherry tomatoes, 2 oz of mozzarella, and a few basil leaves.
  • In a small bowl, mix together the minced garlic and olive oil. Brush the outside of each chicken breast with the garlic oil mixture.
  • Place the stuffed chicken breasts in a baking dish and drizzle with balsamic glaze.
  • Bake in the preheated oven for 25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  • Remove from the oven and let the chicken rest for 5 minutes before serving.
  • Garnish with additional fresh basil leaves and a drizzle of balsamic glaze, if desired.
  • Serve hot and enjoy!
