Caprese Stuffed Chicken Breast

Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup cherry tomatoes, halved
- 8 oz fresh mozzarella, sliced
- 1/4 cup fresh basil leaves
- 2 cloves garlic, minced
- 2 tbsp balsamic glaze
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Using a sharp knife, cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
- Season the inside of each chicken breast with salt and pepper.
- Stuff each chicken breast with 1/4 cup of cherry tomatoes, 2 oz of mozzarella, and a few basil leaves.
- In a small bowl, mix together the minced garlic and olive oil. Brush the outside of each chicken breast with the garlic oil mixture.
- Place the stuffed chicken breasts in a baking dish and drizzle with balsamic glaze.
- Bake in the preheated oven for 25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Remove from the oven and let the chicken rest for 5 minutes before serving.
- Garnish with additional fresh basil leaves and a drizzle of balsamic glaze, if desired.
- Serve hot and enjoy!
