Ingredients
- 8 oz of pasta
- 2 cups of cherry tomatoes, halved
- 8 oz of fresh mozzarella, cubed
- 1/2 cup of fresh basil leaves, chopped
- 1/4 cup of extra virgin olive oil
- 2 tablespoons of balsamic vinegar
- 1 clove of garlic, minced
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and rinse with cold water to cool.
- In a large bowl, combine the cooked pasta, cherry tomatoes, fresh mozzarella, and chopped basil.
- In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, minced garlic, salt, and pepper.
- Pour the dressing over the pasta salad and toss to coat evenly.
- Refrigerate for at least 30 minutes to allow the flavors to meld together.
