  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish

  • 1 cup of white rice
  • 1/2 cup of frozen peas
  • 1/2 cup of frozen corn
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • In a large pot, bring 8 cups of water to a boil. Add the chicken pieces and cook for 20 minutes, skimming off any foam that rises to the surface.
  • Remove the chicken pieces from the pot and set aside to cool. Once cooled, shred the chicken meat and discard the bones and skin.
  • Add the chopped onion, minced garlic, diced carrots, and potatoes to the pot with the chicken broth. Simmer for 10 minutes until the vegetables are tender.
  • Stir in 1 cup of white rice and continue to simmer for another 10 minutes, or until the rice is cooked.
  • Add the shredded chicken back into the pot, along with the frozen peas and corn. Season with salt and pepper to taste, and add the bay leaf for flavor. Simmer for an additional 5 minutes.
  • Remove the bay leaf from the pot and discard. Ladle the Canja de Galinha with Vegetables into bowls, garnish with fresh parsley, and serve hot. Enjoy!
