Ingredients
- 8 oz of fettuccine pasta
- 1 lb of large shrimp, peeled and deveined
- 2 tbsp of Cajun seasoning
- 2 tbsp of olive oil
- 1/2 cup of diced onion
- 1/2 cup of diced bell pepper
- 3 cloves of garlic, minced
- 1 cup of heavy cream
- 1/2 cup of grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the fettuccine pasta according to the package instructions. Drain and set aside.
- In a medium bowl, toss the shrimp with 2 tbsp of Cajun seasoning until evenly coated.
- In a large skillet, heat 2 tbsp of olive oil over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side, until pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the diced onion, bell pepper, and minced garlic. Sauté for 2-3 minutes, until the vegetables are tender.
- Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese until melted and smooth.
- Add the cooked fettuccine pasta and cooked shrimp to the skillet, tossing to coat everything in the creamy sauce. Season with salt and pepper to taste.
- Garnish with fresh parsley and serve hot. Enjoy!
