Ingredients
- 1 pound of large shrimp, peeled and deveined
- 2 tablespoons of Cajun seasoning
- 1 tablespoon of olive oil
- 2 ripe mangoes, diced
- 1/2 red onion, finely chopped
- 1 jalapeno pepper, seeded and minced
- 1/4 cup of fresh cilantro, chopped
- Juice of 2 limes
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- In a large bowl, toss the shrimp with 2 tablespoons of Cajun seasoning and 1 tablespoon of olive oil until evenly coated.
- Thread the shrimp onto skewers, then grill for 2-3 minutes per side, or until they are pink and opaque. Remove from the grill and set aside.
