  • 1 jalapeno pepper, seeded and minced
  • 2 tbsp lime juice

Instructions

  • Heat the olive oil in a large skillet over medium-high heat. Once hot, add the salmon fillets and cook for 3-4 minutes on each side, or until the salmon is blackened and cooked through. Remove from the skillet and set aside.
  • In a medium bowl, combine the diced mango, red bell pepper, red onion, cilantro, jalapeno, and lime juice. Season with salt and pepper to taste, and gently toss to combine.
  • To serve, spoon the mango salsa over the blackened salmon fillets. Serve immediately and enjoy!
