Ingredients
- 1.5 lbs beef shank, cut into chunks
- 1 lb pork hock
- 1 lb pork bones
- 1 onion, halved
- 3 lemongrass stalks, bruised and cut into 3-inch pieces
- 3 shallots, peeled
- 6 cloves garlic, peeled
- 3 tbsp Bun Bo Hue spice mix
- 2 tbsp fish sauce
- 1 tbsp shrimp paste
- 1 tbsp sugar
- 1 tbsp annatto seeds
- 8 cups water
- 1 lb thick rice vermicelli noodles
- Garnishes: bean sprouts, lime wedges, cilantro, Thai basil, thinly sliced onion, thinly sliced banana blossom, thinly sliced cabbage, thinly sliced chili peppers
Instructions
- In a large pot, add the beef shank, pork hock, pork bones, onion, lemongrass, shallots, and garlic.
- Add the Bun Bo Hue spice mix, fish sauce, shrimp paste, sugar, and annatto seeds to the pot.
- Pour in the water and bring to a boil. Skim off any foam that rises to the surface.
- Reduce the heat to low and simmer for 1.5 hours, or until the meat is tender.
- Remove the meat from the pot and set aside. Strain the broth and return it to the pot.
- Cook the rice vermicelli noodles according to the package instructions. Drain and set aside.
- To serve, divide the noodles among serving bowls. Top with the beef shank, pork hock, and garnishes.
- Ladle the hot broth over the noodles and serve immediately.
