  • 1 lb pork bones
  • 1 onion, halved
  • 3 lemongrass stalks, bruised and cut into 3-inch pieces
  • 3 shallots, peeled
  • 6 cloves garlic, peeled
  • 3 tbsp Bun Bo Hue spice mix
  • 2 tbsp fish sauce
  • 1 tbsp shrimp paste
  • 1 tbsp sugar
  • 1 tbsp annatto seeds
  • 8 cups water
  • 1 lb thick rice vermicelli noodles
  • Garnishes: bean sprouts, lime wedges, cilantro, Thai basil, thinly sliced onion, thinly sliced banana blossom, thinly sliced cabbage, thinly sliced chili peppers

Instructions

  • In a large pot, add the beef shank, pork hock, pork bones, onion, lemongrass, shallots, and garlic.
  • Add the Bun Bo Hue spice mix, fish sauce, shrimp paste, sugar, and annatto seeds to the pot.
  • Pour in the water and bring to a boil. Skim off any foam that rises to the surface.
  • Reduce the heat to low and simmer for 1.5 hours, or until the meat is tender.
  • Remove the meat from the pot and set aside. Strain the broth and return it to the pot.
  • Cook the rice vermicelli noodles according to the package instructions. Drain and set aside.
  • To serve, divide the noodles among serving bowls. Top with the beef shank, pork hock, and garnishes.
  • Ladle the hot broth over the noodles and serve immediately.
