Instructions

  • In a large bowl, mix together 2 cups of cooked brown rice, 1 cup of cooked shredded chicken, 1 cup of shredded cheddar cheese, 1/2 cup of diced tomatoes, 1/4 cup of chopped cilantro, and 1/4 cup of diced red onion. Season with salt and pepper to taste.
  • Place a large skillet over medium heat and add 1/2 tablespoon of olive oil. Place one flour tortilla in the skillet and spread 1/4 of the rice and chicken mixture evenly over half of the tortilla. Fold the other half of the tortilla over the filling to create a half-moon shape.
  • Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas and filling, adding more olive oil to the skillet as needed.
  • Once all the quesadillas are cooked, remove them from the skillet and let them cool for a few minutes before slicing into wedges.
