  • 1 cup of brown rice
  • 14 oz block of firm tofu, drained and cubed
  • 2 cups of mixed stir-fry vegetables (such as bell peppers, broccoli, carrots, and snap peas)
  • 3 tablespoons of soy sauce
  • 2 tablespoons of sesame oil
  • 2 cloves of garlic, minced
  • 1 teaspoon of grated ginger
  • 2 tablespoons of vegetable oil
  • Salt and pepper to taste
  • Sesame seeds and sliced green onions for garnish

Instructions

  • Add the mixed stir-fry vegetables to the skillet and cook for 5-7 minutes, or until they are tender-crisp.
  • Return the cooked tofu to the skillet with the vegetables. Add 3 tablespoons of soy sauce and 2 tablespoons of sesame oil. Stir-fry for an additional 2-3 minutes to combine the flavors. Season with salt and pepper to taste.
  • To assemble the bowls, divide the cooked brown rice among 4 serving bowls. Top each bowl with the tofu and stir-fried vegetables mixture. Garnish with sesame seeds and sliced green onions.
  • Serve the brown rice bowl with tofu and stir-fried vegetables immediately and enjoy!
