Brown Rice Bowl with Tofu and Stir-Fried Vegetables

Ingredients
- 1 cup of brown rice
- 14 oz block of firm tofu, drained and cubed
- 2 cups of mixed stir-fry vegetables (such as bell peppers, broccoli, carrots, and snap peas)
- 3 tablespoons of soy sauce
- 2 tablespoons of sesame oil
- 2 cloves of garlic, minced
- 1 teaspoon of grated ginger
- 2 tablespoons of vegetable oil
- Salt and pepper to taste
- Sesame seeds and sliced green onions for garnish
Instructions
- Cook 1 cup of brown rice according to package instructions.
- In a large non-stick skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the cubed tofu and cook for 5-7 minutes, turning occasionally, until golden brown on all sides. Remove from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic and grated ginger, and stir-fry for 1 minute until fragrant.
- Add the mixed stir-fry vegetables to the skillet and cook for 5-7 minutes, or until they are tender-crisp.
- Return the cooked tofu to the skillet with the vegetables. Add 3 tablespoons of soy sauce and 2 tablespoons of sesame oil. Stir-fry for an additional 2-3 minutes to combine the flavors. Season with salt and pepper to taste.
- To assemble the bowls, divide the cooked brown rice among 4 serving bowls. Top each bowl with the tofu and stir-fried vegetables mixture. Garnish with sesame seeds and sliced green onions.
- Serve the brown rice bowl with tofu and stir-fried vegetables immediately and enjoy!
