Ingredients
- 2 cups of finely chopped broccoli
- 1/2 cup of grated cheddar cheese
- 1/4 cup of finely chopped onion
- 1/4 cup of all-purpose flour
- 1/4 cup of grated Parmesan cheese
- 2 eggs
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 tablespoons of olive oil
Instructions
- In a large bowl, combine 2 cups of finely chopped broccoli, 1/2 cup of grated cheddar cheese, 1/4 cup of finely chopped onion, 1/4 cup of all-purpose flour, 1/4 cup of grated Parmesan cheese, 2 eggs, 1/2 teaspoon of garlic powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Mix until well combined.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Scoop about 1/4 cup of the broccoli mixture into the skillet and flatten it with a spatula to form a fritter.
- Cook for 3-4 minutes on each side, or until golden brown and crispy.
- Transfer to a paper towel-lined plate to drain excess oil.
- Repeat with the remaining broccoli mixture.
- Serve the broccoli fritters warm and enjoy!
