Instructions

  • In a large bowl, combine 2 cups of finely chopped broccoli, 1/2 cup of grated cheddar cheese, 1/4 cup of finely chopped onion, 1/4 cup of all-purpose flour, 1/4 cup of grated Parmesan cheese, 2 eggs, 1/2 teaspoon of garlic powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Mix until well combined.
  • Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  • Scoop about 1/4 cup of the broccoli mixture into the skillet and flatten it with a spatula to form a fritter.
