Broccoli and Cheddar Omelette

Ingredients
- 2 large eggs
- 1/2 cup chopped broccoli
- 1/4 cup shredded cheddar cheese
- 1 tablespoon butter
- Salt and pepper to taste
Instructions
- In a small bowl, beat 2 large eggs until well combined. Season with salt and pepper to taste.
- Heat 1/2 tablespoon of butter in a non-stick skillet over medium heat. Add 1/2 cup chopped broccoli and sauté for 2-3 minutes, or until slightly tender.
- Pour the beaten eggs over the broccoli in the skillet. Allow the eggs to set for a minute, then gently lift the edges of the omelette with a spatula, tilting the skillet to let the uncooked eggs flow to the edges.
- Once the omelette is mostly set but still slightly runny on top, sprinkle 1/4 cup shredded cheddar cheese over one half of the omelette.
- Using a spatula, carefully fold the other half of the omelette over the cheese to form a half-moon shape. Cook for another 1-2 minutes, or until the cheese is melted and the omelette is cooked through.
- Slide the omelette onto a plate and serve hot. Enjoy!
