Instructions

  • In a large skillet, cook 8 ounces of turkey sausage over medium heat, breaking it up with a spoon, until browned and cooked through, about 5 minutes.
  • In a bowl, whisk together 4 large eggs, 1/4 cup of milk, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Pour the egg mixture into the skillet with the cooked turkey sausage. Cook, stirring occasionally, until the eggs are set, about 3 minutes.
  • Sprinkle 1 cup of shredded cheddar cheese over the eggs and cook for another 1-2 minutes, until the cheese is melted.
  • Warm 4 large flour tortillas in the microwave for 20 seconds or in a dry skillet for 30 seconds on each side.
