  • Add the diced onion and bell pepper to the skillet and sauté until they are softened, about 3-4 minutes.
  • In a bowl, beat the eggs and season with salt and pepper.
  • Pour the beaten eggs into the skillet with the sautéed vegetables and cook, stirring occasionally, until the eggs are scrambled and cooked through.
  • Warm the flour tortillas in a separate skillet or in the microwave for 20 seconds.
