Ingredients
- 1 lb of salted codfish
- 2 cups of mashed potatoes
- 1/2 cup of chopped onions
- 1/4 cup of chopped parsley
- 2 cloves of garlic, minced
- 2 eggs
- 1/2 cup of all-purpose flour
- 1/2 teaspoon of baking powder
- Salt and pepper to taste
- Vegetable oil for frying
- 1/2 cup of mayonnaise
- 2 tablespoons of hot sauce
- 1 tablespoon of lime juice
- 1 teaspoon of paprika
Instructions
- Soak the salted codfish in water for 24 hours, changing the water 3-4 times to remove the salt. Drain and rinse the codfish.
- In a large pot, cover the codfish with water and bring to a boil. Reduce heat and simmer for 10 minutes. Drain and let cool. Remove any skin and bones, then flake the codfish.
- In a large bowl, mix the flaked codfish, mashed potatoes, chopped onions, parsley, minced garlic, eggs, flour, baking powder, salt, and pepper until well combined.
- Form the mixture into small balls, about 1.5 inches in diameter, and flatten slightly to form a disc shape.
- In a large skillet, heat vegetable oil over medium-high heat. Fry the codfish balls in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.
