Created by: Howcan Team

Ingredients

  • 1 lb of salted codfish
  • 2 cups of mashed potatoes
  • 1/2 cup of chopped onions
  • 1/4 cup of chopped parsley
  • 2 cloves of garlic, minced
  • 2 eggs
  • 1/2 cup of all-purpose flour
  • 1/2 teaspoon of baking powder
  • Salt and pepper to taste
  • Vegetable oil for frying
  • 1/2 cup of mayonnaise
  • 2 tablespoons of hot sauce
  • 1 tablespoon of lime juice
  • 1 teaspoon of paprika

Instructions

  • Soak the salted codfish in water for 24 hours, changing the water 3-4 times to remove the salt. Drain and rinse the codfish.
  • In a large pot, cover the codfish with water and bring to a boil. Reduce heat and simmer for 10 minutes. Drain and let cool. Remove any skin and bones, then flake the codfish.
  • In a large bowl, mix the flaked codfish, mashed potatoes, chopped onions, parsley, minced garlic, eggs, flour, baking powder, salt, and pepper until well combined.
  • Form the mixture into small balls, about 1.5 inches in diameter, and flatten slightly to form a disc shape.
  • In a large skillet, heat vegetable oil over medium-high heat. Fry the codfish balls in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.
  • In a small bowl, mix the mayonnaise, hot sauce, lime juice, and paprika to make the spicy dipping sauce.
  • Serve the Bolinho de Bacalhau hot with the spicy dipping sauce on the side. Enjoy!

The Brazilian Bolinho de Bacalhau, also known as codfish fritters, has a rich history dating back to the Portuguese colonization of Brazil. This beloved dish is a popular street food and a staple at family gatherings and celebrations. The crispy exterior gives way to a fluffy, flavorful interior, showcasing the perfect blend of salted cod, potatoes, onions, and parsley. The addition of a spicy dipping sauce adds an extra kick to the dish, elevating the flavors and providing a satisfying contrast to the savory bolinhos. In Brazil, renowned chefs and home cooks alike take pride in perfecting their bolinho de bacalhau recipes, each adding their own unique twist to the classic dish. The northeastern region of Brazil, particularly in the state of Bahia, is known for its exceptional bolinho de bacalhau, where the dish is often served with a fiery malagueta pepper sauce that sets the taste buds on fire. To experience the best version of this dish, head to traditional Brazilian restaurants or street vendors in Bahia, where you can savor the authentic flavors of bolinho de bacalhau with a side of spicy dipping sauce. The key to achieving the perfect bolinho de bacalhau lies in the quality of the salted cod, the balance of ingredients, and the precise frying technique to achieve that irresistible golden crunch. For a unique twist, some chefs incorporate regional spices or even add a touch of heat directly into the fritter mixture, creating a spicy surprise in every bite.
