Benne wafers, a beloved Southern treat, have a rich history dating back to the 17th century when West African slaves brought sesame seeds, known as "benne" in their native language, to the American South. These thin, crispy cookies were originally made by skilled African American cooks in Charleston, South Carolina, and have since become a cherished part of Southern cuisine. The addition of a sprinkle of sea salt on top adds a delightful contrast of flavors, enhancing the nutty sweetness of the benne wafers. Today, the best versions of this dish can be found in traditional Southern bakeries and restaurants, where skilled chefs honor the legacy of this iconic treat. The key to making perfect benne wafers lies in achieving the ideal balance of sesame seeds, butter, and sugar, and mastering the delicate art of baking them to a golden crisp. While the classic recipe remains a favorite, some chefs have put their own spin on the dish, incorporating alternative methods such as using different types of sugar or adding a hint of citrus zest for a modern twist.
