Instructions

  • In a large skillet, cook 1 lb of ground beef over medium heat until browned. Drain any excess fat.
  • Add 1 packet of taco seasoning to the cooked beef and stir to combine. Cook for an additional 2-3 minutes. Remove from heat and set aside.
  • In a large bowl, combine 1 head of chopped romaine lettuce, 1 cup of halved cherry tomatoes, 1/2 cup of shredded cheddar cheese, 1/4 cup of diced red onion, 1/4 cup of sliced black olives, and 1/2 cup of crushed tortilla chips.
  • In a small bowl, whisk together 1/2 cup of sour cream, 1/4 cup of salsa, 1/4 cup of chopped fresh cilantro, and the juice of 1 lime. Season with salt and pepper to taste.
  • Add the cooked beef to the salad bowl and toss to combine.
  • Drizzle the zesty dressing over the salad and toss to coat evenly.
  • Divide the salad among 4 serving plates and enjoy!
