  • 4 large flour tortillas
  • 2 cups of shredded Mexican cheese blend
  • 1 ripe avocado, peeled and pitted
  • 1 tablespoon of lime juice
  • 1/4 cup of diced red onion
  • 1/4 cup of diced tomato
  • 2 tablespoons of chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  • In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat.
  • Add the thinly sliced beef sirloin to the skillet and season with 1 teaspoon of chili powder, 1 teaspoon of cumin, 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, salt, and pepper. Cook for 5-7 minutes or until the beef is cooked through. Remove from heat and set aside.
  • In a medium bowl, mash the ripe avocado with 1 tablespoon of lime juice until smooth. Stir in the diced red onion, diced tomato, chopped fresh cilantro, and season with salt and pepper to taste. This is your guacamole.
  • Heat a large non-stick skillet over medium heat. Place one flour tortilla in the skillet and sprinkle with 1/2 cup of shredded Mexican cheese blend. Top with a quarter of the cooked beef and another 1/2 cup of shredded cheese. Place another tortilla on top.
  • Cook for 2-3 minutes on each side or until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas and beef to make 4 quesadillas.
  • Cut the quesadillas into wedges and serve topped with a dollop of sour cream and a spoonful of guacamole. Enjoy!
