Ingredients
- 1 pound of beef sirloin, thinly sliced
- 1 tablespoon of vegetable oil
- 1 onion, diced
- 1 bell pepper, diced
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 8 flour tortillas
- 2 cups of shredded cheese (such as cheddar or Monterey Jack)
- 1 cup of salsa
- 1/4 cup of pickled jalapenos
Instructions
- In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat.
- Add the thinly sliced beef sirloin and cook until browned, about 5-7 minutes.
- Add the diced onion and bell pepper to the skillet and cook for an additional 3-4 minutes, until the vegetables are softened.
- Season the beef and vegetables with 1 teaspoon of cumin, 1 teaspoon of chili powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Stir to combine and remove from heat.
- Place a flour tortilla on a flat surface and sprinkle 1/4 cup of shredded cheese over half of the tortilla. Spoon a portion of the beef and vegetable mixture over the cheese. Fold the tortilla in half to cover the filling.
- Repeat with the remaining tortillas, cheese, and beef mixture.
- Heat a large skillet or griddle over medium heat. Place the filled tortillas in the skillet and cook for 2-3 minutes on each side, until the tortillas are golden brown and the cheese is melted.
- Remove the quesadillas from the skillet and cut into wedges.
- Serve the beef quesadillas with salsa and pickled jalapenos on the side.
