Beef Quesadilla

Ingredients
- 1 pound of beef sirloin, thinly sliced
- 1 tablespoon of vegetable oil
- 1 teaspoon of chili powder
- 1 teaspoon of cumin
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of onion powder
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 4 large flour tortillas
- 2 cups of shredded Mexican cheese blend
- 1/2 cup of diced tomatoes
- 1/4 cup of chopped fresh cilantro
- 1/4 cup of sour cream
- 1/4 cup of salsa
Instructions
- In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat.
- Add the thinly sliced beef sirloin to the skillet and season with 1 teaspoon of chili powder, 1 teaspoon of cumin, 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Cook for 5-7 minutes, or until the beef is fully cooked. Remove from heat and set aside.
- Place a large non-stick skillet over medium heat. Place one flour tortilla in the skillet and sprinkle 1/2 cup of shredded Mexican cheese blend over the tortilla. Add 1/4 of the cooked beef on one half of the tortilla. Sprinkle 2 tablespoons of diced tomatoes and 1 tablespoon of chopped fresh cilantro over the beef. Fold the tortilla in half to cover the filling.
- Cook for 2-3 minutes, or until the bottom is golden brown and crispy. Carefully flip the quesadilla and cook for an additional 2-3 minutes, or until the other side is golden brown and the cheese is melted.
- Remove the quesadilla from the skillet and repeat the process with the remaining tortillas and filling ingredients.
- Cut each quesadilla into wedges and serve with sour cream and salsa on the side. Enjoy!
