Ingredients
- 1 pound of ground beef
- 1 onion, diced
- 1 bell pepper, diced
- 1 cup of cooked rice
- 1 can of black beans, drained and rinsed
- 1 cup of shredded cheddar cheese
- 1/2 cup of salsa
- 4 large flour tortillas
- 1 tablespoon of olive oil
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- Salt and pepper to taste
Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add 1 diced onion and 1 diced bell pepper to the skillet and cook until softened, about 5 minutes.
- Add 1 pound of ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks.
- Stir in 1 teaspoon of cumin, 1 teaspoon of chili powder, and salt and pepper to taste.
- Add 1 cup of cooked rice and 1 can of black beans to the skillet, stirring to combine and heat through.
- Warm 4 large flour tortillas in the microwave for 20 seconds to make them pliable.
- Divide the beef and rice mixture evenly among the tortillas, placing it in the center of each tortilla.
- Top each with 1/4 cup of shredded cheddar cheese and 2 tablespoons of salsa.
- Fold the sides of the tortillas over the filling, then roll them up tightly to form burritos.
- Place the burritos seam-side down in a heated skillet and cook for 2-3 minutes on each side until golden brown and crispy.
- Serve the beef burritos hot, with additional salsa and sour cream if desired. Enjoy!
