Instructions

  • In a bowl, mix together 1/4 cup soy sauce, 1/4 cup rice vinegar, and 1/4 cup brown sugar until the sugar is dissolved.
  • Heat 2 tbsp of cooking oil in a large pot over medium-high heat.
  • Add the beef belly cubes and sear on all sides until browned, about 5 minutes.
  • Add the minced garlic and sliced onion to the pot and cook for 2 minutes.
  • Pour in the soy sauce mixture and 1 cup of beef broth. Add 2 bay leaves and 1 tsp of black peppercorns.
  • Bring the liquid to a boil, then reduce the heat to low, cover the pot, and simmer for 2.5 to 3 hours, or until the beef belly is tender.
  • Stir occasionally and add more beef broth if needed to keep the meat covered in liquid.
  • Once the beef belly is tender, remove the bay leaves and serve the braised beef belly hot with steamed rice or vegetables. Enjoy!
