Braised Beef Belly

Ingredients
- 2 lbs beef belly, cut into 2-inch cubes
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 1/4 cup brown sugar
- 1 cup beef broth
- 4 cloves garlic, minced
- 1 onion, sliced
- 2 bay leaves
- 1 tsp black peppercorns
- 2 tbsp cooking oil
Instructions
- In a bowl, mix together 1/4 cup soy sauce, 1/4 cup rice vinegar, and 1/4 cup brown sugar until the sugar is dissolved.
- Heat 2 tbsp of cooking oil in a large pot over medium-high heat.
- Add the beef belly cubes and sear on all sides until browned, about 5 minutes.
- Add the minced garlic and sliced onion to the pot and cook for 2 minutes.
- Pour in the soy sauce mixture and 1 cup of beef broth. Add 2 bay leaves and 1 tsp of black peppercorns.
- Bring the liquid to a boil, then reduce the heat to low, cover the pot, and simmer for 2.5 to 3 hours, or until the beef belly is tender.
- Stir occasionally and add more beef broth if needed to keep the meat covered in liquid.
- Once the beef belly is tender, remove the bay leaves and serve the braised beef belly hot with steamed rice or vegetables. Enjoy!
