- 1 pound beef stew meat, cubed
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth

- 1 teaspoon paprika
- 1/2 teaspoon salt

- 1 small head of cabbage, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
Instructions
- In a large pot, heat 1 tablespoon of olive oil over medium-high heat.
- Add the beef stew meat and brown on all sides, about 5 minutes.
- Add the chopped onion and minced garlic, and cook for 2-3 minutes until softened.
- Pour in the beef broth and diced tomatoes with their juices. Stir in the dried thyme, paprika, salt, and black pepper.
- Bring the soup to a boil, then reduce the heat to low and simmer for 1 hour, partially covered.
- Add the chopped cabbage, sliced carrots, and celery to the pot. Cook for an additional 20-30 minutes until the vegetables are tender.
