Ingredients
- 2 boneless, skinless chicken breasts
- 1/2 cup BBQ sauce
- 1/4 cup ranch dressing
- 8 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup corn kernels
- 1/2 cup black beans, drained and rinsed
- 1/4 cup shredded cheddar cheese
- 1/4 cup crispy fried onions
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- Season the chicken breasts with salt and pepper.
- Grill the chicken for 6-7 minutes on each side, or until fully cooked.
- Brush the BBQ sauce on both sides of the chicken during the last 2 minutes of grilling.
- Remove the chicken from the grill and let it rest for 5 minutes before slicing it into strips.

- Sprinkle the shredded cheddar cheese and crispy fried onions on top.
