  • 1/2 cup BBQ sauce
  • 1/4 cup ranch dressing
  • 8 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup corn kernels
  • 1/2 cup black beans, drained and rinsed
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup crispy fried onions
  • Salt and pepper to taste

  • 1/2 red onion, thinly sliced
  • 1/2 cup corn kernels
  • 1/2 cup black beans, drained and rinsed
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup crispy fried onions
  • Salt and pepper to taste

Instructions

  • Preheat grill to medium-high heat.
  • Season the chicken breasts with salt and pepper.
  • Grill the chicken for 6-7 minutes on each side, or until fully cooked.
  • Brush the BBQ sauce on both sides of the chicken during the last 2 minutes of grilling.
  • Remove the chicken from the grill and let it rest for 5 minutes before slicing it into strips.
  • In a small bowl, mix the ranch dressing with 1 tablespoon of water to thin it out.
  • In a large bowl, toss the mixed salad greens, cherry tomatoes, red onion, corn, and black beans together.
  • Divide the salad mixture onto 4 plates.
  • Top each salad with the sliced BBQ chicken.
  • Drizzle the ranch dressing over the chicken and salad.
