  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup BBQ sauce
  • 4 hamburger buns

Instructions

  • In a large bowl, mix together 1 cup vital wheat gluten, 2 tablespoons nutritional yeast, 1 teaspoon smoked paprika, 1 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon salt, and 1/2 teaspoon black pepper.
  • In a separate bowl, whisk together 3/4 cup vegetable broth, 2 tablespoons soy sauce, and 1 tablespoon tomato paste.
  • Pour the wet ingredients into the dry ingredients and stir to combine. Knead the mixture for 3-5 minutes until it becomes elastic.
  • Divide the seitan dough into 4 equal pieces and shape each piece into a log. Wrap each log tightly in aluminum foil.
  • In a large pot, bring water to a boil. Add the wrapped seitan logs and reduce heat to a simmer. Cook for 40 minutes, turning occasionally.
  • While the seitan is cooking, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced onion and minced garlic, and sauté until softened.
  • Once the seitan is cooked, remove it from the pot and let it cool. Unwrap the seitan and shred it using two forks.
  • Add the shredded seitan to the skillet with the onions and garlic. Pour in 1 cup of BBQ sauce and stir to coat the seitan. Cook for an additional 5 minutes, until heated through.
  • Toast the hamburger buns and spoon the BBQ pulled seitan onto the bottom half of each bun. Top with the other half of the bun and serve hot.
