  • 1/4 cup of sour cream (optional)
  • 1/4 cup of salsa (optional)

Instructions

  • In a mixing bowl, combine 2 cups of cooked, shredded chicken with 1 cup of BBQ sauce. Mix well to coat the chicken evenly.
  • Place a large skillet over medium heat and lightly grease with cooking spray or oil.
  • Lay a flour tortilla flat in the skillet. Sprinkle 1/2 cup of shredded cheddar cheese and 1/4 cup of shredded mozzarella cheese evenly over one half of the tortilla.
  • Spread 1/2 cup of the BBQ chicken mixture over the cheese, then sprinkle with 2 tablespoons of diced red onion and 1 tablespoon of chopped fresh cilantro.
  • Fold the empty half of the tortilla over the filling to create a half-moon shape. Press down gently with a spatula to help the cheese melt and hold the quesadilla together.
  • Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
  • Repeat with the remaining tortillas and filling ingredients.
  • Once all quesadillas are cooked, slice each into 3 wedges and serve with sour cream and salsa on the side, if desired.
