Instructions

  • In a large bowl, toss the drained and cubed tofu with 1/2 cup of cornstarch until evenly coated.
  • In a large skillet, heat 1/4 cup of vegetable oil over medium-high heat. Add the coated tofu cubes and cook until golden and crispy, about 5-7 minutes. Remove from the skillet and set aside.
  • In the same skillet, add 1/2 cup of cashews and toast for 2-3 minutes until lightly browned. Remove from the skillet and set aside.
  • In a small bowl, mix together 1/4 cup of mayonnaise, 2 tablespoons of sweet chili sauce, 1 tablespoon of sriracha sauce, 1 tablespoon of soy sauce, 1 tablespoon of rice vinegar, 1 teaspoon of sesame oil, 1/4 teaspoon of garlic powder, and 1/4 teaspoon of salt.
  • Return the cooked tofu to the skillet and pour the sauce over the tofu. Toss to coat the tofu evenly with the sauce and cook for an additional 2-3 minutes until heated through.
  • Remove from heat and sprinkle with the toasted cashews and chopped green onions.
