Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 2 large ripe bananas, mashed
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts
- For Streusel Topping:
- 1/4 cup all-purpose flour
- 1/4 cup granulated sugar
- 2 tablespoons unsalted butter, cold and cubed
- 1/4 cup chopped walnuts
Instructions
- Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease with non-stick cooking spray.
- In a large bowl, whisk together 2 cups of flour, baking soda, baking powder, and salt.
- In a separate bowl, mix together melted butter and granulated sugar until well combined. Add mashed bananas, milk, and vanilla extract, and stir until smooth.
- Add the wet ingredients to the dry ingredients and gently fold together until just combined. Do not overmix. Fold in the chopped walnuts.
- Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
- To make the streusel topping, in a small bowl, combine 1/4 cup flour and 1/4 cup sugar. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs. Stir in the chopped walnuts.
- Sprinkle the streusel topping over the muffin batter in the cups.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. Enjoy!
