Instructions

  • Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease with non-stick cooking spray.
  • In a large bowl, whisk together 2 cups of flour, baking soda, baking powder, and salt.
  • In a separate bowl, mix together melted butter and granulated sugar until well combined. Add mashed bananas, milk, and vanilla extract, and stir until smooth.
  • Add the wet ingredients to the dry ingredients and gently fold together until just combined. Do not overmix. Fold in the chopped walnuts.
  • Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
  • To make the streusel topping, in a small bowl, combine 1/4 cup flour and 1/4 cup sugar. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs. Stir in the chopped walnuts.
  • Sprinkle the streusel topping over the muffin batter in the cups.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. Enjoy!
