Balsamic Grilled Chicken Salad

Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup balsamic vinegar
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup balsamic vinaigrette dressing
Instructions
- In a small bowl, whisk together 1/2 cup balsamic vinegar, 1/4 cup olive oil, minced garlic, dried oregano, salt, and black pepper.
- Place the chicken breasts in a resealable plastic bag and pour half of the balsamic vinaigrette over the chicken. Seal the bag and marinate in the refrigerator for at least 30 minutes.
- Preheat grill to medium-high heat. Remove the chicken from the marinade and discard the used marinade. Grill the chicken for 6-7 minutes on each side, or until fully cooked through. Remove from the grill and let it rest for 5 minutes before slicing.
- In a large bowl, toss the mixed salad greens, cherry tomatoes, and red onion with the remaining balsamic vinaigrette dressing.
- Divide the salad mixture onto 4 plates and top each with sliced grilled chicken. Sprinkle with crumbled feta cheese and serve immediately.
