Balsamic Glazed Grilled Vegetable and Tofu Skewers

Created by: Howcan Team

Ingredients

  • 1 block (14 oz) extra firm tofu, pressed and cut into 1-inch cubes
  • 2 zucchinis, sliced into 1/2-inch rounds
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into 1-inch pieces
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 wooden skewers, soaked in water for 30 minutes

Instructions

  • In a small bowl, whisk together the balsamic vinegar, olive oil, minced garlic, dried oregano, salt, and black pepper to make the marinade.
  • Place the tofu cubes, zucchini rounds, bell pepper pieces, and red onion pieces in a large resealable plastic bag. Pour the marinade over the vegetables and tofu. Seal the bag and gently toss to coat. Marinate in the refrigerator for at least 20 minutes, or up to 2 hours.
  • Preheat the grill to medium-high heat.
  • Thread the marinated tofu, zucchini, bell peppers, and red onion onto the soaked wooden skewers, alternating the vegetables and tofu as desired.
  • Lightly oil the grill grate. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, or until the vegetables are tender and the tofu is lightly charred.
  • While grilling, brush the skewers with any remaining marinade to create a glaze.
  • Once the skewers are cooked, remove them from the grill and let them rest for a few minutes before serving.
  • Serve the balsamic glazed grilled vegetable and tofu skewers hot, with any remaining glaze drizzled over the top. Enjoy!

The history of Balsamic Glazed Grilled Vegetable Skewers with added tofu dates back to the Mediterranean region, where chefs sought to create a flavorful and protein-packed vegetarian dish. This innovative twist on traditional vegetable skewers emerged as a response to the growing demand for plant-based protein options. Renowned chefs in Italy and Greece began incorporating tofu into the recipe, infusing it with the rich flavors of balsamic glaze and grilled vegetables. Today, this dish has become a staple in vegetarian and vegan cuisine, celebrated for its robust flavors and nutritional benefits. The best versions of this dish can be found in authentic Mediterranean restaurants, where chefs skillfully marinate the tofu and vegetables in a tangy balsamic glaze before grilling them to perfection. The key to mastering this dish lies in achieving the ideal balance of savory balsamic glaze and the smoky char from the grill, creating a harmonious blend of flavors and textures. For a unique twist, some chefs also incorporate alternative methods such as marinating the tofu in a blend of herbs and spices before grilling, adding an extra layer of complexity to the dish.
