Ingredients
- 1 block (14 oz) extra firm tofu, pressed and cut into 1-inch cubes
- 2 zucchinis, sliced into 1/2-inch rounds
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 wooden skewers, soaked in water for 30 minutes
Instructions
- In a small bowl, whisk together the balsamic vinegar, olive oil, minced garlic, dried oregano, salt, and black pepper to make the marinade.
- Place the tofu cubes, zucchini rounds, bell pepper pieces, and red onion pieces in a large resealable plastic bag. Pour the marinade over the vegetables and tofu. Seal the bag and gently toss to coat. Marinate in the refrigerator for at least 20 minutes, or up to 2 hours.
- Preheat the grill to medium-high heat.
- Thread the marinated tofu, zucchini, bell peppers, and red onion onto the soaked wooden skewers, alternating the vegetables and tofu as desired.
- Lightly oil the grill grate. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, or until the vegetables are tender and the tofu is lightly charred.
- While grilling, brush the skewers with any remaining marinade to create a glaze.
- Once the skewers are cooked, remove them from the grill and let them rest for a few minutes before serving.
