Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup balsamic vinegar
- 3 tablespoons honey
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups cherry tomatoes
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 2 zucchinis, sliced
- 2 tablespoons balsamic glaze (for serving)
- Fresh basil leaves (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, whisk together 1/2 cup balsamic vinegar, 3 tablespoons honey, 2 tablespoons olive oil, minced garlic, dried oregano, dried thyme, salt, and black pepper.
- Place the chicken breasts in a resealable plastic bag and pour half of the balsamic mixture over the chicken. Seal the bag and marinate in the refrigerator for at least 30 minutes.
- In a large bowl, toss the cherry tomatoes, red bell pepper, yellow bell pepper, red onion, and zucchinis with the remaining balsamic mixture. Spread the vegetables in a single layer on a baking sheet.
- Remove the chicken from the marinade and place on a separate baking sheet. Discard the marinade from the chicken bag.
- Roast the vegetables and chicken in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender, stirring the vegetables once halfway through cooking.
- Remove the chicken and vegetables from the oven. Drizzle the chicken with 2 tablespoons of balsamic glaze.
- Garnish with fresh basil leaves and serve the balsamic glazed chicken with the roasted vegetables. Enjoy!
