  • 8 oz of egg noodles
  • 2 tbsp of vegetable oil
  • 3 cloves of garlic, minced
  • 1 small onion, thinly sliced
  • 1/2 cup of shredded cabbage
  • 1/2 cup of carrots, julienned
  • 1/2 cup of green beans, cut into 1-inch pieces
  • 1/2 cup of chicken, sliced
  • 2 tbsp of sweet soy sauce (kecap manis)
  • 1 tbsp of soy sauce
  • 1/2 tsp of ground white pepper
  • 1/2 tsp of salt
  • 2 green onions, chopped
  • Fried shallots for garnish

Instructions

  • Cook the egg noodles according to package instructions. Drain and set aside.
  • Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat.
  • Add the minced garlic and sliced onion, and stir-fry for 1 minute until fragrant.
  • Add the chicken and cook until it turns white, then push the ingredients to the side of the wok.
  • Add another tablespoon of vegetable oil to the empty space in the wok, then crack in the eggs and scramble until just set.
  • Stir in the shredded cabbage, julienned carrots, and green beans. Cook for 2-3 minutes until the vegetables are slightly softened.
  • Add the cooked egg noodles to the wok, followed by sweet soy sauce, soy sauce, ground white pepper, and salt. Toss everything together until well combined and heated through.
  • Taste and adjust the seasoning if needed.
  • Garnish with chopped green onions and fried shallots before serving.
