Instructions

  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper and set aside.
  • Cut the zucchinis into thin strips, similar to the size of fries.
  • In a shallow dish, combine 1/2 cup of breadcrumbs, 1/4 cup of grated Parmesan cheese, 1 teaspoon of garlic powder, 1 teaspoon of paprika, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • In another shallow dish, beat 2 eggs.
  • Dip each zucchini strip into the beaten eggs, then coat with the breadcrumb mixture, pressing gently to adhere the coating to the zucchini.
  • Place the coated zucchini strips on the prepared baking sheet in a single layer.
