Baked Ziti with Spinach and Mushrooms

Ingredients
- 1 pound ziti pasta
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes
- 1 (28 ounce) can crushed tomatoes
- 1 (10 ounce) package frozen chopped spinach, thawed and drained
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 375 degrees F. Grease a 9x13 inch baking dish.
- Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes. Drain.
- Heat olive oil in a large skillet over medium heat. Add the onion and garlic; cook and stir until the onion is translucent, about 5 minutes.
- Stir in the mushrooms, oregano, basil, and red pepper flakes. Cook and stir until the mushrooms are tender, about 5 minutes.
- Pour in the crushed tomatoes and bring to a simmer. Cook for 10 minutes, then stir in the spinach. Season with salt and pepper to taste.
- In a large bowl, combine the cooked ziti, mushroom and spinach mixture, ricotta cheese, and half of the Parmesan and mozzarella cheeses. Mix until well combined.
- Transfer the mixture to the prepared baking dish. Sprinkle the remaining Parmesan and mozzarella cheeses over the top.
- Bake in the preheated oven until the cheese is melted and bubbly, about 25 minutes.
- Allow to cool for a few minutes before serving. Enjoy!
