  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese

Instructions

  • Preheat the oven to 375 degrees F. Grease a 9x13 inch baking dish.
  • Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes. Drain.
  • Heat olive oil in a large skillet over medium heat. Add the onion and garlic; cook and stir until the onion is translucent, about 5 minutes.
  • Stir in the mushrooms, oregano, basil, and red pepper flakes. Cook and stir until the mushrooms are tender, about 5 minutes.
  • Pour in the crushed tomatoes and bring to a simmer. Cook for 10 minutes, then stir in the spinach. Season with salt and pepper to taste.
  • In a large bowl, combine the cooked ziti, mushroom and spinach mixture, ricotta cheese, and half of the Parmesan and mozzarella cheeses. Mix until well combined.
  • Transfer the mixture to the prepared baking dish. Sprinkle the remaining Parmesan and mozzarella cheeses over the top.
  • Bake in the preheated oven until the cheese is melted and bubbly, about 25 minutes.
  • Allow to cool for a few minutes before serving. Enjoy!
