Ingredients
- 4 salmon fillets (6 oz each)
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 2 lemons, juiced and zested
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups brown rice
- 4 cups water or chicken broth
- 2 tbsp chopped fresh parsley
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together 1/4 cup olive oil, minced garlic, lemon juice, lemon zest, 1/2 tsp salt, and 1/4 tsp black pepper.
- Place the salmon fillets on a baking sheet lined with parchment paper. Brush the lemon garlic mixture over the salmon.
- Bake the salmon in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.
- While the salmon is baking, rinse the brown rice under cold water. In a medium saucepan, bring 4 cups of water or chicken broth to a boil. Add the brown rice, reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the cooked brown rice with a fork and stir in the chopped parsley.
- Serve the baked lemon garlic salmon with the fluffy brown rice. Enjoy!
