  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 2 lemons, juiced and zested
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups brown rice
  • 4 cups water or chicken broth
  • 2 tbsp chopped fresh parsley

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a small bowl, mix together 1/4 cup olive oil, minced garlic, lemon juice, lemon zest, 1/2 tsp salt, and 1/4 tsp black pepper.
  • Place the salmon fillets on a baking sheet lined with parchment paper. Brush the lemon garlic mixture over the salmon.
  • Bake the salmon in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.
  • While the salmon is baking, rinse the brown rice under cold water. In a medium saucepan, bring 4 cups of water or chicken broth to a boil. Add the brown rice, reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
  • Fluff the cooked brown rice with a fork and stir in the chopped parsley.
  • Serve the baked lemon garlic salmon with the fluffy brown rice. Enjoy!

Baked Lemon Garlic Salmon with Brown Rice is a classic dish that combines the delicate flavors of salmon with the zesty tang of lemon and the aromatic essence of garlic. This dish has its roots in Mediterranean cuisine, where fresh seafood and wholesome grains are staples. Renowned chefs like Jamie Oliver and Ina Garten have popularized this recipe, adding their own unique twists. The best version of this dish can be found in coastal regions where fresh salmon is abundant, such as the Pacific Northwest in the United States or Norway in Europe. The key to perfecting this dish lies in sourcing high-quality salmon and infusing it with the right balance of lemon and garlic. For a delicious alternative, consider grilling the salmon instead of baking it for a smoky flavor.
