Ingredients
- 4 halibut fillets (6 oz each)
- 1/2 cup breadcrumbs
- 2 tbsp chopped fresh parsley
- 1 tbsp chopped fresh dill
- 1 tbsp chopped fresh chives
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 lb mixed vegetables (such as bell peppers, zucchini, and cherry tomatoes)
- 1 tbsp balsamic vinegar
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- 1/4 tsp red pepper flakes
- 2 tbsp chopped fresh basil
- 2 tbsp grated Parmesan cheese
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, combine 1/2 cup breadcrumbs, 2 tbsp chopped parsley, 1 tbsp chopped dill, 1 tbsp chopped chives, 2 cloves minced garlic, 1/4 cup grated Parmesan cheese, and salt and pepper to taste.
- Place the halibut fillets on a baking sheet lined with parchment paper. Press the herb breadcrumb mixture onto the top of each fillet to form a crust.
- Drizzle 2 tbsp of olive oil over the halibut fillets.
- In a separate bowl, toss 1 lb of mixed vegetables with 1 tbsp balsamic vinegar, 1 tsp dried oregano, 1/2 tsp garlic powder, 1/4 tsp red pepper flakes, and salt and pepper to taste. Spread the vegetables around the halibut on the baking sheet.
- Bake in the preheated oven for 20-25 minutes, or until the halibut is cooked through and the vegetables are tender.
- Sprinkle the roasted vegetables with 2 tbsp chopped basil and 2 tbsp grated Parmesan cheese before serving.
