Ingredients
- 1 large eggplant, cut into fries
- 1 cup of breadcrumbs
- 1/2 cup of grated Parmesan cheese
- 1 teaspoon of garlic powder
- 1 teaspoon of dried oregano
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 eggs, beaten
- Cooking spray
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly coat it with cooking spray.
- In a shallow dish, combine 1 cup of breadcrumbs, 1/2 cup of grated Parmesan cheese, 1 teaspoon of garlic powder, 1 teaspoon of dried oregano, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
