Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a shallow dish, mix 2 tbsp Cajun seasoning, 1/2 cup panko breadcrumbs, and 1/4 cup grated Parmesan cheese.
  • Season the cod fillets with salt and pepper, then dip each fillet into the Cajun breadcrumb mixture, pressing gently to adhere. Place the coated fillets on the prepared baking sheet.
  • Bake the cod in the preheated oven for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
  • While the cod is baking, prepare the lime butter sauce. In a small saucepan, melt 1/4 cup butter over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
  • Stir in the juice and zest of 2 limes, and season with salt and pepper to taste. Cook for an additional 2-3 minutes, then remove from heat and stir in 2 tbsp chopped fresh parsley.
