Ingredients
- 4 cod fillets (6 oz each)
- 2 tbsp Cajun seasoning
- 1/2 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup melted butter
- 2 limes (juiced and zested)
- 2 cloves garlic (minced)
- 2 tbsp chopped fresh parsley
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a shallow dish, mix 2 tbsp Cajun seasoning, 1/2 cup panko breadcrumbs, and 1/4 cup grated Parmesan cheese.
- Season the cod fillets with salt and pepper, then dip each fillet into the Cajun breadcrumb mixture, pressing gently to adhere. Place the coated fillets on the prepared baking sheet.
- Bake the cod in the preheated oven for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
- While the cod is baking, prepare the lime butter sauce. In a small saucepan, melt 1/4 cup butter over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
