Ingredients
- 1 lb of white fish fillets, such as snapper or grouper, finely chopped
- 1/2 cup of all-purpose flour

- 2 cloves of garlic, minced
- 1/4 cup of chopped fresh parsley
- 1 teaspoon of baking powder
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 teaspoon of cayenne pepper
- 1/2 cup of water
- Vegetable oil for frying
Instructions
- In a large bowl, combine the chopped fish, flour, cornmeal, onion, bell pepper, garlic, parsley, baking powder, salt, black pepper, and cayenne pepper.
- Gradually add the water and mix until a thick batter forms.
- In a large skillet, heat about 1 inch of vegetable oil over medium-high heat.
- Drop spoonfuls of the fish batter into the hot oil and fry until golden brown, about 3-4 minutes per side.
- Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
