Ingredients
- 1 lb conch meat, finely chopped
- 1/2 cup bell pepper, finely diced

- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cayenne pepper
- 1/2 cup milk
- 2 eggs, beaten
- Vegetable oil for frying
Instructions
- In a large bowl, combine the chopped conch meat, bell pepper, onion, celery, garlic, and parsley.
- In a separate bowl, mix together the flour, baking powder, salt, black pepper, and cayenne pepper.
- Gradually add the dry ingredients to the conch mixture, stirring to combine.
- In a small bowl, whisk together the milk and beaten eggs. Gradually add this mixture to the conch batter, stirring until well combined.
- In a large skillet, heat about 2 inches of vegetable oil over medium-high heat until it reaches 350°F (175°C).
- Drop spoonfuls of the conch batter into the hot oil, frying in batches for 2-3 minutes on each side, or until golden brown and crispy.
