Ingredients
- 1 lb boneless, skinless chicken breast, finely chopped
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped bell pepper
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper
- 1/2 cup milk
- 1 egg, beaten
- Vegetable oil for frying
Instructions
- In a large bowl, combine the chopped chicken, flour, cornmeal, onion, bell pepper, garlic, parsley, salt, black pepper, and cayenne pepper.
- In a separate bowl, whisk together the milk and beaten egg.
- Pour the milk and egg mixture over the chicken mixture and stir until well combined.
- In a large skillet, heat about 1 inch of vegetable oil over medium-high heat.
- Drop spoonfuls of the chicken mixture into the hot oil, flattening slightly with the back of the spoon.
- Fry for 3-4 minutes on each side, or until golden brown and cooked through.
- Remove the fritters from the oil and place on a paper towel-lined plate to drain excess oil.
- Serve hot and enjoy!
