Instructions

  • In a large bowl, combine the chopped chicken, flour, cornmeal, onion, bell pepper, garlic, parsley, salt, black pepper, and cayenne pepper.
  • In a separate bowl, whisk together the milk and beaten egg.
  • Pour the milk and egg mixture over the chicken mixture and stir until well combined.
  • In a large skillet, heat about 1 inch of vegetable oil over medium-high heat.
  • Drop spoonfuls of the chicken mixture into the hot oil, flattening slightly with the back of the spoon.
  • Fry for 3-4 minutes on each side, or until golden brown and cooked through.
  • Remove the fritters from the oil and place on a paper towel-lined plate to drain excess oil.
  • Serve hot and enjoy!
