Ingredients
- 2 cups of shelled fava beans
- 1 cup of chopped fresh dill
- 1/2 cup of chopped fresh parsley
- 1/2 cup of chopped fresh cilantro
- 1/4 cup of vegetable oil
- 1 large onion, finely chopped
- 6 cloves of garlic, minced
- 4 eggs
- 1 teaspoon of turmeric
- Salt and pepper to taste
Instructions
- In a large pot, bring 4 cups of water to a boil. Add the shelled fava beans and cook for 10 minutes. Drain and set aside.
- In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until golden brown.
- Add the minced garlic and turmeric to the skillet and sauté for an additional 2 minutes, stirring constantly.
- Add the cooked fava beans, chopped dill, parsley, and cilantro to the skillet. Season with salt and pepper. Cook for 10 minutes, stirring occasionally.
- Using a spoon, make 4 wells in the mixture. Crack an egg into each well. Cover the skillet and cook for 5-7 minutes, or until the egg whites are set but the yolks are still runny.
- Serve the Baghali Ghatogh with extra garlic hot with flatbread or rice. Enjoy!
