  • In a large pot, bring 4 cups of water to a boil. Add the shelled fava beans and cook for 10 minutes. Drain and set aside.

  • Add the minced garlic and turmeric to the skillet and sauté for an additional 2 minutes, stirring constantly.
  • Add the cooked fava beans, chopped dill, parsley, and cilantro to the skillet. Season with salt and pepper. Cook for 10 minutes, stirring occasionally.
  • Using a spoon, make 4 wells in the mixture. Crack an egg into each well. Cover the skillet and cook for 5-7 minutes, or until the egg whites are set but the yolks are still runny.
  • Serve the Baghali Ghatogh with extra garlic hot with flatbread or rice. Enjoy!
