  • Fill a large saucepan with water and bring to a boil. Once boiling, reduce the heat to a gentle simmer and add 1 tablespoon of white vinegar.
  • Crack one egg into a small bowl. Using a spoon, create a gentle whirlpool in the simmering water and carefully slide the egg into the center. Repeat with the second egg. Poach for 3-4 minutes for a soft yolk, or longer if desired.
  • While the eggs are poaching, place the toasted bagel halves on a plate. Divide the sliced avocado and smoked salmon evenly among the bagel halves.
  • Using a slotted spoon, carefully remove the poached eggs from the water and drain on a paper towel. Place one poached egg on top of each bagel half.
  • Season the poached eggs with salt and pepper, and garnish with fresh dill. Serve immediately and enjoy!
