  • Add the diced onion and bell pepper to the skillet with the potatoes. Cook for an additional 5 minutes until the vegetables are tender.
  • Season the potato mixture with salt, black pepper, and paprika. Stir to combine.
  • Create 4 wells in the potato mixture and crack an egg into each well. Cover the skillet and cook for 5-7 minutes, or until the eggs are cooked to your desired doneness.
  • Sprinkle the cooked bacon and shredded cheddar cheese over the skillet. Cover and cook for an additional 2 minutes, or until the cheese is melted.
