Ingredients
- 6 slices of bacon, chopped
- 4 cups of diced potatoes
- 1 small onion, diced
- 1 bell pepper, diced
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/2 teaspoon of paprika
- 4 eggs
- 1/2 cup of shredded cheddar cheese
- 2 tablespoons of chopped fresh parsley
Instructions
- In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon grease in the skillet.
- Add the diced potatoes to the skillet with the bacon grease. Cook for about 10 minutes, stirring occasionally, until the potatoes are golden and crispy.
- Add the diced onion and bell pepper to the skillet with the potatoes. Cook for an additional 5 minutes until the vegetables are tender.
- Season the potato mixture with salt, black pepper, and paprika. Stir to combine.
- Create 4 wells in the potato mixture and crack an egg into each well. Cover the skillet and cook for 5-7 minutes, or until the eggs are cooked to your desired doneness.
- Sprinkle the cooked bacon and shredded cheddar cheese over the skillet. Cover and cook for an additional 2 minutes, or until the cheese is melted.
- Garnish with chopped fresh parsley before serving. Enjoy hot!
