Instructions

  • In a large skillet, cook the bacon over medium heat until crispy. Remove from the skillet and drain on paper towels. Crumble the bacon and set aside.
  • In the same skillet, melt the butter over medium heat. Crack the eggs into the skillet and season with salt and pepper. Scramble the eggs until they are just set.
  • Warm the flour tortillas in the microwave for 10 seconds to make them pliable.
  • Divide the scrambled eggs between the two tortillas, then sprinkle the crumbled bacon and shredded cheddar cheese on top of the eggs.
  • Fold the sides of the tortillas over the filling, then roll them up tightly to form burritos.
  • If desired, heat a clean skillet over medium heat and place the burritos seam-side down to crisp them up for 1-2 minutes on each side.
