Ingredients
- 2 medium sweet potatoes
- 1 ripe avocado
- 1/4 cup diced red onion
- 1/4 cup diced tomato
- 1/4 cup chopped cilantro
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash the sweet potatoes and prick them several times with a fork. Place them on a baking sheet and bake for 45-50 minutes, or until tender.
- While the sweet potatoes are baking, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork.
- Add the diced red onion, diced tomato, chopped cilantro, and lime juice to the mashed avocado. Season with salt and pepper, and mix well.
- Once the sweet potatoes are cooked, remove them from the oven and let them cool for a few minutes.
- Slice each sweet potato lengthwise and fluff the flesh with a fork. Spoon the avocado mixture into the sweet potatoes, dividing it evenly between the two.
- Serve immediately and enjoy!
