Instructions

  • Preheat the oven to 400°F (200°C).
  • Wash the sweet potatoes and prick them several times with a fork. Place them on a baking sheet and bake for 45-50 minutes, or until tender.
  • While the sweet potatoes are baking, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork.
  • Add the diced red onion, diced tomato, chopped cilantro, and lime juice to the mashed avocado. Season with salt and pepper, and mix well.
  • Once the sweet potatoes are cooked, remove them from the oven and let them cool for a few minutes.
  • Slice each sweet potato lengthwise and fluff the flesh with a fork. Spoon the avocado mixture into the sweet potatoes, dividing it evenly between the two.
  • Serve immediately and enjoy!
