Instructions

  • Season the chicken breasts with salt and pepper. Heat a grill pan or skillet over medium-high heat and cook the chicken for 6-7 minutes on each side, or until cooked through. Remove from heat and let it rest for 5 minutes before slicing into strips.
  • In a small bowl, whisk together the lime juice, olive oil, honey, and a pinch of salt and pepper to make the dressing.
  • In a large bowl, combine the diced avocado, chopped red onion, and cilantro. Add the sliced chicken and pour the dressing over the mixture. Toss gently to coat everything with the dressing.
