  • 4 large whole wheat tortillas
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  • Crack the eggs into the skillet and cook to your desired doneness, seasoning with salt and pepper. Remove from heat and set aside.
  • Lay out the whole wheat tortillas and divide the sliced avocados evenly among them, spreading them out in the center of each tortilla.
  • Divide the cooked eggs, diced tomatoes, diced red onion, chopped cilantro, and shredded cheddar cheese evenly among the tortillas on top of the avocado.
  • Fold in the sides of each tortilla and then roll them up tightly to create a wrap.
  • Return the wraps to the skillet and cook for 2-3 minutes on each side, or until the tortillas are golden brown and crispy.
  • Remove from the skillet and let cool for a minute before slicing each wrap in half.
  • Serve immediately and enjoy!
