Instructions

  • In a large skillet, cook the bacon over medium heat until crispy. Remove from the skillet and place on a paper towel-lined plate to drain. Once cooled, crumble the bacon into small pieces.
  • In the same skillet with the bacon drippings, crack the eggs and scramble them over medium heat until cooked through. Season with salt and pepper to taste.
  • Warm the flour tortillas in a separate skillet or in the microwave for 20 seconds to make them pliable.
  • Divide the scrambled eggs, crumbled bacon, sliced avocado, shredded cheddar cheese, diced tomatoes, and diced red onion evenly among the tortillas, placing the ingredients in the center of each tortilla.
  • Fold the sides of the tortillas over the filling, then roll them up tightly to form burritos.
  • If desired, heat the assembled burritos in a skillet over medium heat for 2-3 minutes on each side to lightly brown and melt the cheese.
  • Serve the bacon avocado breakfast burritos with hot sauce on the side, if desired, and enjoy!
