Ingredients
- 4 large eggs
- 1 ripe avocado, sliced
- 1 cup fresh spinach leaves
- 1/4 cup shredded cheddar cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a bowl, beat 4 large eggs until well combined. Season with salt and pepper to taste.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Add 1 cup of fresh spinach leaves to the skillet and cook for 1-2 minutes until wilted.
- Pour the beaten eggs over the spinach in the skillet, swirling to spread them evenly.
- Cook the eggs for 2-3 minutes, lifting the edges with a spatula to let the uncooked eggs flow underneath.
- Once the omelette is mostly set, place the sliced avocado on one half of the omelette and sprinkle 1/4 cup of shredded cheddar cheese on top.
- Carefully fold the other half of the omelette over the filling and cook for another 1-2 minutes until the cheese is melted and the omelette is cooked through.
- Slide the omelette onto a plate, slice, and serve hot. Enjoy!
