Instructions

  • In a bowl, beat 4 large eggs until well combined. Season with salt and pepper to taste.
  • Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  • Add 1 cup of fresh spinach leaves to the skillet and cook for 1-2 minutes until wilted.
  • Pour the beaten eggs over the spinach in the skillet, swirling to spread them evenly.
  • Cook the eggs for 2-3 minutes, lifting the edges with a spatula to let the uncooked eggs flow underneath.
  • Once the omelette is mostly set, place the sliced avocado on one half of the omelette and sprinkle 1/4 cup of shredded cheddar cheese on top.
  • Carefully fold the other half of the omelette over the filling and cook for another 1-2 minutes until the cheese is melted and the omelette is cooked through.
  • Slide the omelette onto a plate, slice, and serve hot. Enjoy!
