  • 1 tbsp of olive oil
  • 1 tsp of cumin
  • 1 tsp of chili powder
  • 1/2 tsp of garlic powder
  • 1/2 tsp of onion powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 cup of diced pineapple
  • 1/4 cup of diced red onion
  • 1/4 cup of chopped cilantro
  • 1 jalapeno, seeded and diced
  • Juice of 1 lime
  • Salt to taste

Instructions

  • Preheat grill to medium-high heat.
  • In a bowl, combine the sliced skirt steak, olive oil, cumin, chili powder, garlic powder, onion powder, salt, and pepper. Toss to coat the meat evenly.
  • Grill the marinated steak for 3-4 minutes per side, or until it reaches your desired level of doneness. Remove from the grill and let it rest for 5 minutes before slicing it into thin strips.
  • While the steak is resting, grill the pineapple slices for 2-3 minutes per side, until they have grill marks. Remove from the grill and let them cool before dicing them.
  • In a separate bowl, combine the diced pineapple, red onion, cilantro, jalapeno, and lime juice. Season with salt to taste and mix well to make the grilled pineapple salsa.
  • Warm the corn tortillas on the grill for about 30 seconds per side.
  • To assemble the tacos, place a few slices of grilled steak on each tortilla and top with a spoonful of grilled pineapple salsa.
